Steps for preparation
- After harvesting and
threshing, clean paddy free of foreign material, dust and debris
- After cleaning soak it in
water for 8 hrs
- Drain the water and steam it
for 20 minutes
- Followed by aeration for 3
hrs and heaping for 3 hrs
- Then tempering is done for 1
hr

Finally sun dry it for 2-4
hrs till it dries to a final moisture content of 14%
