Steps for preparation
- Roast the rice bran in a frying pan on medium heat. A nice roasted
fragrance will start when they have finished roasting. Need not to use any oil
for this as the bran already contains oil.
- Cream the sugar and the butter or margarine together in a bowl.
- Add the vanilla extract (1 tsp) and egg (1) until well combined.
- Add the flour (180 g), baking powder (1 tsp), and roasted rice bran (65
g). You can add more rice bran if you like to add even more fibre and vitamins
to the cookies.
- After everything has been combined, form the dough into a long baton and wrap in cling film. Chill in the fridge for 30 minutes.
- Preheat your oven to 170°C. Slice the dough into 5mm thick rounds and bake for about 20 minutes. Allow to cool.
